Paco Roncero’s Lab
Paco Roncero’s Lab is an independent gastronomic space, Paco Roncero’s research laboratory, where creativity prevails in the atmosphere. A living space, editor of emotions, as well as a unique tool to create multisensory experiences like never before in the field of gastronomy. It is the embryo of the restaurant “Sublimotion”.
In addition to different and innovative technology applied to gastronomy, the space has an olive oil library, unique in the world, with a collection of more than 60 monovarietal extra virgin olive oils.
Designed and built under the parameters of circular economy, sustainability, with recycled materials and a design of maximum comfort. We also offer the possibility of fully reserving this space for private events.
